~~糕糕又黎啦~~











今年..有人要我幫手整蘿蔔糕同馬蹄糕送比人......真係好大壓力.....所以之前都已經練習定...試下整...好好彩地.....蘿蔔糕就冇問題....但馬蹄糕就.....前日整左..以為只係軟身左0的..點知雪左一日.佢竟然變左灰色..而且真係變得"好糕"......完成唔似馬蹄糕.......好唔開心.....因為應承左要整...所以要整到成功先可以整黎送比人....所以尋晚雖然好眼訓(成個下午教同事整蘿蔔糕..冇訓度),都再試整...蒸完放涼後玥放左佢入雪櫃...今朝先睇佢......哦.....但又好似唔錯喎......切黎睇睇....佢又幾彈啦.....yeah..成功.......好彩..好彩......
另外因為之前試整蘿蔔糕..買多左蘿蔔(係多左一個double....有兩條)媽咪話左我幾日啦..所以今日整埋佢......yeah......整左一底....加4小杯...0的杯杯好cutie...hehe......諗住送比laam......留定比佢先......

馬碲糕雪左係o甘架,唔洗驚!!如果好介意再蒸返熱佢就會變返小小透明架啦

個蘿蔔糕..我其實係用你個recipe架..不過就將粘米粉同粟粉0既份量調轉左
recipe係修改from藍雨
材料:
蘿蔔 2斤 (1200g)
蝦米 1兩
冬菇 1/4 兩 (20g) (我沒有用)
臘腸 2條 (80g)
臘肉半條(約100g)
鷹粟粉 2兩 (75g)
粘米粉 4兩 (150g)
水 1.1/2 杯(cup)
調味料: (可隨個人喜好)
鹽 1/4 湯匙
雞粉 1 茶匙
胡椒粉 1 茶匙
五香粉1 茶匙
生抽 2大匙
製法:
1) 蝦米洗淨浸透;冬菇浸透,切粒;臘腸洗浸切粒。
2) 燒鑊加油爆香蝦米、冬菇及臘腸,盛起。
3) 蘿蔔去皮洗淨切幼條,用適量水同煮至蘿蔔軟身盛起。
4) 將蘿蔔之水份,量出 1.1/2 杯份量待涷,將鷹粟粉、粘米粉及調味料倒入開勻,加入炒好的材料,然後下鑊煮杰混合;
5) 糕盤塗油,將混合物倒入扒平,大火蒸 40 -60分鐘分鐘。
6) 蒸好後以筷子插入糕中,若不沾粉表示已熟,待涷後切片煎香食用。

馬碲糕

材料:
去皮馬蹄12粒
馬蹄粉145g
片糖150g(我用了約50g冰糖+100g片糖)
清水2 .5杯

做法:
1. 馬蹄一些切粒一些切片。
2. 馬蹄粉過篩備用。
3. 用1杯水開溶粉類(份量內,水要煮溫)。
4. 餘下的1又 1 /2杯水把糖煮溶,把馬蹄加入一起煮至糖溶解後,水滾後立刻熄火。
5. 把馬蹄粉水加入馬蹄糖水中,一面攪一面加,轉慢火,並攪拌至馬蹄粉起膠狀。
6. 把生料倒入蒸盆,蒸20分鐘。放涼後可切件食或煎食。

係馬蹄糕食譜上有少少唔明,麻煩你為我解答!
1)清水2.5杯係用量杯既杯 or用水杯呢?
2)step3要用溫水?d粉會唔會變一糰糰架?
3)仲有無其他要注意呢?

沛水我用量杯量架...如果計番..2.5杯即250+250+125,即625ml︿另外我會用溫水(暖暖地)去開粉,用打蛋器(唔係打蛋機)攪佢...佢會易0的溶...同埋我會將0的粉水過一過篩..另外..落粉水煮佢時唔好用大火..用最細火..一邊煮一邊攪..見佢有少少杰身就離火....離火後攪佢一陣就可以放入盆.....如果煮得太耐..佢會開始硬身....咁放入盆就會好硬身..好難整平佢....

我知道呀...我前姆 日買左一盒新0既粟粉都睇倒....不過我見你有recipe..而且杠 出黎唔錯..所以又試下.....點知第一次整...就已經將粘粉同粟粉0既份量調轉左..點知出黎0既放果唔錯..所以一直都係咁整...hehe.....
